Fried Coconut Chutney Powder, is a delicious side dish popular in Kerala, commonly known as Chammanthipodi. We can have it with boiled rice, dosa, idly etc. Definitely, it is one of the must have items in our lunch pack. Moreover, we can keep it longer, even without refrigerating.
Also, it is very easy to make this dish, and I will share with you the simple recipe.
Preparation and cooking time: 40 minutes.
Ingredients needed:
- Ripe Coconut : 1.
- Red chilly : 6 nos.
- Black pepper : 1tbsp.
- Black gram : 1 tbsp.
- Coriander ( optional ) : 1 tsp.
- Tamarind : a small ball.
- Shallots : 4 nos.
- Garlic cloves : 3 nos.
- Curry leaves : 1 sprig.
- Salt : to taste.
How to prepare :
Step 1: Grate coconut and add ingredients.
First, grate coconut finely using a scraper. Always use ripe coconut for this recipe. Peel and chop shallots and garlic. Then mix all the ingredients together, except tamarind and salt. Keep it in a thick bottomed pan, preferably non-stick.
Step 2. Frying ingredients.

Put the pan on the stove with a medium flame. Stir continuously using a wooden spoon.
Lower the flame when the colour of coconut begins to change. Keep on stirring so as to fry all the ingredients evenly. When it becomes golden brown, put the pan out of the flame. Stir for a few more seconds.
Meanwhile, all the ingredients become crispy.
Step 3. Grinding the Fried Coconut Chutney Powder.

Surely, we can grind our chutney powder in the mixer jar. Remember to keep the jar free from any trace of moisture.
First, put the fried chillies, salt and tamarind in the jar and grind for a few seconds. Stir occasionally with a spatula, to prevent sticking tamarind on the mixer blades.
Then, add all other ingredients and grind well.

Your fried coconut chutney powder is ready. Keep it in an air tight glass jar. Boiled rice, along with this chutney powder, fried vegetables, ginger curry ( or any other pickle ) and a little curd, make a perfect meal. Without any doubt we can say that children as well as grown ups will love this menu.
